
Welcome back to Ashley’s Bakery! St. Patrick’s Day is right around the corner and I wanted to share an adorable treat to bring to your kid’s school, work or any St. Patty’s party!
These colorful treats have a pistachio cake base with a simple frosting with lucky charms to make it festive! Pistachio is a different flavor of cake but has become one of the absolute favorite flavors of my family.

First lets talk about what you need!
- 1 pkg. of white or yellow box cake mix
- 1 pkg. (4 serving size) pistachio instant pudding mix
- 3 eggs
- 1 cup club soda (or water)
- 1/2 cup oil
- 1 pkg. of frosting
- 1-2 boxes of Lucky Charms
Now first you may see a few things that are different in my list of ingredients. I use a plain cake mix and jazz it up with the pistachio pudding mix to give it the pistachio flavor. I also use club soda in this recipe instead of water because club soda adds extra leavening which makes the cake rise better and have a lighter and fluffier texture. You can always stick to water but this is just a little trick I use.
Now this is a really simple execution. Simply combine all ingredients in a large mixer bowl, then beat at medium speed for 2 minutes.
Fill your cupcake liners in the pan about 75% full. If you fill more they will over flow. (I made cupcakes with this recipe but you are totally able to make it in a regular cake pan.)
Place the cupcake pan in the oven at 350 degrees for 25-30 minutes. If you use regular water instead of the club soda then just add 5-10 minutes. I always check my cakes with a small tooth pick to make sure its done. If you stick in a toothpick in the middle of the cake or cupcake and it comes out clean, then its done!
Once your cupcakes are baked place your cupcakes in the fridge and wait for them to fully cool.

While the cupcakes are cooling, you are going to need to separate the marshmallows from the Lucky Charms cereal. I used about 2 boxes but if you are doing a cake you might need more. The only reason I used that many boxes was because I didn’t want to use the unicorn marshmallows.


Since I didn’t make my own frosting for this recipe, I like to doctor it a bit. I simply take the can of frosting and put it into my stand mixer and then whip it. You will get almost double the amount of frosting. It is also lighter and easier to spread and manipulate while frosting the cupcakes.


Now its time to frost and decorate our cupcakes! I like to use just small amount of frosting to make sure that the marshmallows stick and stay. Then just place the marshmallows in whatever pattern you want.

Boom! you have an adorable St. Patrick’s Day treat that everyone will be in awe over! I promise you everyone will love it!
