Easter Chocolate Chip Cookies

There is simply nothing better than an ooey gooey chocolate chip cookie! At least that is my belief. Chocolate chip cookies have always been my favorite go to dessert so trying different recipes and trying to perfect the chocolate chip recipe has always been my goal. These have become my go to Easter cookies to make!

This recipe is simple and ordinary but I will share some of my tricks that I use to make them come out perfect. I have learned alot from other bloggers and from family, so I decided to share my tricks with you!

First off here is the recipe! In order to make these delish cookies here is what you will need:

  • 3/4 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 12 oz semi-sweet chocolate chips
  • 3/4 cup M&Ms

Now when prepping all your ingredients to make the cookies you will need to take your butter and eggs out. You will want both of these at room temperature. I actually like my butter to a bit colder than room temp so I actually put half on my counter to be room temp and then the other half I will keep in the fridge to keep cool. Let me explain, for this recipe I took 1/2 cup of butter and put it on the counter to thaw and get soft. Then as I was making the cookies I took out the remaining 1/4 of butter out of the fridge and continued with the recipe.

Alright now that everything is prepped and measured out. Lets get down to the instructions!

First preheat your oven to 350 degrees. Then you are going to want to get your sugars and butter and cream them together in a large bowl. Once those are creamed together, add the egg and vanilla and beat until well combined.

Next, in a separate bowl mix together flour, cornstarch, baking soda, and salt.

Now you will start to add your dry ingredients to your wet ingredients. You will want to add the dry mixture in small batches. You will do this until all the dry mixture is fully added and the whole dough is well combined.

Since your dough is almost ready all you will need to do now is fold in your chocolate chips and M&Ms.

The M&M portion is completely optional. Since I was making these as an Easter dessert I chose to use pastel colors. You are more than welcome to add nuts or nothing at all if you just want to make these for any occasion. But if you are making these as I did, you will want to save some of your M&Ms to place on top after the cookies are done baking to make sure the Easter colors showcased!

Now take a small baking sheet and line it with parchment paper. You are then going to scoop out cookie dough and roll into balls. They should be about 2 tablespoons. Once you have the dough rolled into uniform balls you are going to place them on the baking sheet you lined with parchment paper and cover with plastic wrap. Then take the sheet and place it in the freezer for at least an hour and up to overnight.

So let me explain a few things you may have notice that are different from your other recipes and instructions. I add in cornstarch because it helps soften the proteins of the flour and helps make the texture of the cookies to be gooey and thick.

Also I like to place the rolled cookie dough into the freezer because it helps with the problem of spreading. Alot of time when making homemade cookies I have had the issue of cookies spreading out too much in the oven and becoming too thin and crispy.

Once your balls have been frozen you will take another baking sheet and place the dough balls about an inch apart and bake them for 10-12 mintues. I always set my alarm for about 8 minutes and then constantly am checking the cookies. I call it baby sitting them to make sure they are perfect. When they are done they will look a little bit under done but I promise they are finished baking.

When you take your cookies out of the oven, leave them on the baking sheet. I like to leave them on the baking sheet to finish baking. It gives the bottom a little bit of a browning effect and helps the cookies stay together because of the good base.

While the cookies are still hot take your extra candies and gently press them into the top of your cookies.
