Soft and Chewy Oatmeal Raisin Cookies
Ingredients
2 sticks unsalted butter (room temp)
1 cup dark brown sugar
2 large eggs
2 tsp pure vanilla extract
1 ½ cups flour
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
3 cups old fashion rolled oats
1 ½ cups raisins or crasins
1 cup sugar
Directions
- Preheat oven to 350° F
- In stand mixer, beat room temperature butter, brown sugar, and white sugar on medium speed till light and fluffy.
- Turn mixer speed to low and add the room temperature eggs one at a time
- Add in vanilla extract and mix until combined
- In separate bowl, sift flour, baking powder, cinnamon and salt
- With mixer on low, slowly add the dry flour mixture to the butter-sugar mixture. Mix until combined
- Add the rolled oats and raisins till they are just mixed in
- Using a 2 oz cookie scoop, drop scoops around 2 inches apart on a parchment lined cookie sheet
- Flatten the mounds slightly with your fingers or the bottom of a glass cup
- Bake for 10 – 12 minutes and cool completely. Enjoy!
